St. Chaeromon

St. Chaeromon was a bishop of Nilopolis in Egypt who was already advanced in age when Emperor Trajanus Decius began the intense persecution of Christians. 

Chaeromon and his companions fled to Arabia, and are believed to have been martyred there.

Recipe 

Middle Eastern Rice Cookies

These classic cookies are made with rice flour and a hint of rose water. 
They tend to be quite crumbly. They’re often topped with poppy seeds for decoration, but it’s optional.

 

Ingredients

  • 1 Cup sugar

  • 4 Cups rice flour

  • 2 eggs

  • 1/2 Teaspoon baking powder

  • 1 Teaspoon ground cardamom
     

Directions

  1. In a separate bowl, combine the dry ingredients and then add to the wet ingredients.

  2. Once the dough has formed, mold into a disc, cover and chill overnight.

  3. Preheat the oven to 250°F.

  4. Dust a large surface with flour and roll the dough out to about 1/3 inch thick. Using whatever shape you want, cut out the shapes you want.

  5. Place the cookies on parchment-lined baking sheets. Place the cookies 2-inches apart from one another.

  6. Bake for 10-15 minutes, until the cookies are baked but not golden.

  7. Allow to cool.
