Saint Moses the Black

Patron Saint of Africa

St. Moses the Black's Story

Born into slavery to an Egyptian official’s family. An unruly thief, he was driven from the house and fell in with a band of robbers. On the run, he took refuge with hermits at the monastery of Petra in the desert of Skete, Egypt. He was converted and joined them as a monk. Priest. Possessed of supernatural gifts. A confirmed pacifist, he refused to defend himself with his monastery was attacked.

Recipe

We are celebrating with an Egyptian recipe because our Saint was from Egypt.
 

 

Egyptian Hawawshi ( Alexandria Way )

Ingredients
 

The Dough  

  • 5½ Cups AP Flour 

  • 1 Cup Oil 

  • 2 Cups Warm water  

  • ¼ Teaspoons Black pepper 

  • 1 Teaspoon Salt 
     

Stuffing 

  • 2 Tomato 

  • 2 Green pepper  

  • 1 Onion 

  • 1 Carrot 

  • 1 stalk Celery 

  • ¾ kilograms Chopped meat ( beef ) 

  • 1 Teaspoon Black pepper 

  • 1 Teaspoon Paprika 

  • 2 Teaspoons Salt 

  • 1 Teaspoon Beef Spice
     

Direction:
 

  1. Preheat the oven at 300 'F

  2. Add the flour, salt, black pepper, and oil together.

  3. Mix well.

  4. Add the warm water and mix well with your hand.

  5. divide the dough into 16 equal parts and let them rest.

  6. Start preparing the vegetables Cut tomatoes (2 big ) with out seeds

  7. Cut the green pepper (2 big )

  8. Cut the onion ( one big ) and one big carrot and some chopped celery

  9. Add salt, black pepper, spices beef, and paprika to the beef 

  10. Mix all chopped vegetable to the beef

  11. Divide the meat to 16 parts like the dough

  12. Put on the table some of the oil and a ball of dough

  13. roll out the dough as a circle

  14. Put the meat ball in the middle

  15. Roll the meat ball as a circle

  16. Close the dough on the meat

  17. Put it in the oven ( 300 F ) for 15 to 20 min
